Meat and Seasoning
- 1 pound beef sausage links
- 1/2 teaspoon Cajun seasoning
- 1/4 teaspoon smoked paprika

- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced

- 1 tablespoon olive oil
- 4 hoagie rolls or sandwich buns
- 2 tablespoons mayonnaise (optional)
- 1 tablespoon Creole mustard or spicy brown mustard (optional)
Instructions
- Cook the Sausage: Heat olive oil in a large skillet over medium heat. Add the beef sausage links and cook until browned on all sides and cooked through, about 8–10 minutes, turning occasionally. Remove sausages from the skillet and set aside.
- Sauté Vegetables: In the same skillet, add the sliced green and red bell peppers, yellow onion, and minced garlic. Cook for 6–8 minutes until the vegetables are soft and slightly caramelized, stirring occasionally to prevent burning.
- Season the Vegetables: Stir in Cajun seasoning and smoked paprika, then season with salt and black pepper to taste. Mix well to incorporate the spices evenly.
- Combine Sausage and Vegetables: Slice the cooked sausages lengthwise or into rounds as preferred, then return them to the skillet. Toss the sausages with the seasoned vegetables to combine and heat through for a couple of minutes.
- Assemble Sandwiches: Spread mayonnaise and Creole or spicy brown mustard inside each hoagie roll if desired. Fill each roll generously with the sausage and pepper mixture. Serve the sandwiches warm for best flavor and enjoyment.
