Ingredients
Panna Cotta Base
- 1 cup heavy cream
- ½ cup whole milk
- ⅓ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 packet unflavored gelatin
- 2 tablespoons cold water
Mango Layer
- 1½ cups ripe mango puree (fresh or canned)
- 1 tablespoon lemon or lime juice
Optional Topping
- Diced fresh mango for garnish
Instructions
- Bloom the Gelatin: Sprinkle the unflavored gelatin over 2 tablespoons of cold water in a small bowl and let it sit for 5 minutes until the gelatin softens and blooms.
- Heat Cream Mixture: In a saucepan over medium heat, combine the heavy cream, whole milk, and granulated sugar. Stir gently and heat just until the sugar dissolves and the mixture is hot but not boiling, ensuring a smooth blend without curdling.
- Dissolve Gelatin: Remove the saucepan from heat and stir in the bloomed gelatin until completely dissolved. Then add the vanilla extract for flavor and mix well.
- Add Mango Puree: Allow the mixture to cool slightly to prevent cooking the mango, then whisk in the ripe mango puree and lemon or lime juice until the mixture is smooth and evenly combined.
- Set the Panna Cotta: Pour the mango cream mixture evenly into serving glasses or ramekins. Refrigerate for at least 4 hours, or until fully set and firm to the touch.
- Serve and Garnish: Before serving, optionally top each panna cotta with diced fresh mango to add texture and an extra burst of fruity flavor.
Notes
- For a layered look, reserve some plain panna cotta mixture before adding the mango puree. Pour the plain layer into the glasses first and allow it to partially set before adding the mango layer on top.
- Use very ripe mangoes for the freshest and sweetest flavor profile.
- This dessert must be refrigerated to set properly and achieve the desired creamy texture.
