Description

Ingredients

For the crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt

For the mango filling:

  • 1 1/2 cups fresh mango purée (from about 2 large ripe mangoes)
  • 4 large eggs
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest

For the lime glaze:

  • 1 cup powdered sugar
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. Make the crust: Cream butter and sugar, then mix in flour and salt to form a dough. Press into the pan and bake until golden.
  3. Prepare the filling: Whisk together mango purée, eggs, sugar, flour, salt, lime juice, and zest. Pour over crust and bake until set.
  4. Make the glaze: Mix powdered sugar, lime juice, and zest. Drizzle over cooled bars and refrigerate before slicing.

  • You can use frozen mango chunks if fresh mangoes aren’t available.
