Description

These Mango Bars with Lime Glaze are a tropical-inspired dessert featuring a buttery crust topped with a smooth mango filling and a zesty lime glaze. Perfectly balanced between sweet and tangy, they are ideal for summer gatherings or a refreshing treat any time of the year.


Ingredients

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (cold and cubed)

For the filling:

  • 2 cups fresh or frozen mango (thawed if frozen)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1/4 teaspoon salt

For the glaze:

  • 1/2 cup powdered sugar
  • 12 tablespoons lime juice (to desired consistency)
  • additional lime zest for garnish


Instructions

  1. Prepare the crust: Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal. In a medium bowl, combine the flour, powdered sugar, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture becomes crumbly. Press the crust mixture evenly into the prepared baking pan.
  2. Bake the crust: Bake the crust in the preheated oven for 15–18 minutes or until it is lightly golden. Remove from the oven once done.
  3. Make the filling: While the crust bakes, blend the mango in a blender or food processor until smooth. In a separate bowl, whisk together the mango purée, granulated sugar, eggs, flour, lime juice, lime zest, and salt until fully combined and smooth.
  4. Assemble and bake the bars: Pour the mango filling evenly over the hot crust. Return the pan to the oven and bake for an additional 22–26 minutes, or until the center is set and no longer jiggly.
  5. Cool and chill: Remove the bars from the oven and let them cool completely at room temperature. Once cooled, refrigerate for at least 2 hours to allow the filling to set fully.
  6. Prepare the glaze: Whisk together the powdered sugar and lime juice until the glaze reaches your desired consistency.
  7. Finish and serve: Drizzle the lime glaze evenly over the chilled bars and sprinkle with additional lime zest for garnish. Slice into 9 bars and serve chilled.

Notes

  • Fresh mango provides the best flavor, but frozen mango works well once thawed.
  • For a firmer texture in the filling, add a bit more flour.
  • These bars can be made a day in advance and stored in the refrigerator.
