Description

Ingredients

For the crust:

  • 1 1/4 cups all-purpose flour
  • 1/3 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1–2 tablespoons ice water

For the filling:

  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup heavy cream

For the topping:

  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 2 tablespoons apricot jam
  • 1 teaspoon water


Instructions

  1. Preheat the oven: to 350°F (175°C).
  2. In a bowl, mix the flour, powdered sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, until the dough comes together. Press the dough into a 9-inch tart pan, prick with a fork, and bake for 18–20 minutes. Let cool.

  3. Prepare the filling:
  4. In a bowl, beat cream cheese, sugar, and vanilla until smooth. Add heavy cream and beat until fluffy. Spread into the cooled crust.

  5. Add the topping:
  6. Arrange fresh berries on top. Heat apricot jam with water, brush over berries. Chill before serving.
