Description

Maine Potato Candy, also known as Needhams, is a sweet, nostalgic treat made with mashed potatoes, coconut, and chocolate. These delightful candies are a perfect blend of creamy texture and rich chocolate coating. They are a great homemade gift or a delicious snack for any occasion.


Ingredients

  • 1 medium potato, peeled and cubed

  • 1/4 cup butter, softened

  • 4 cups powdered sugar

  • 1 1/2 cups shredded coconut

  • 1/2 teaspoon vanilla extract

  • 12 ounces semisweet chocolate chips

 

  • 2 tablespoons vegetable oil


Instructions

  1. Cook the Potato: In a medium pot, bring water to a boil and cook the cubed potato until tender, about 10-15 minutes. Drain and mash the potato until smooth. Allow it to cool.

  2. Make the Candy Filling: In a large mixing bowl, combine the mashed potato and softened butter. Stir in powdered sugar, shredded coconut, and vanilla extract until everything is well combined and forms a thick dough.

  3. Shape the Candies: Scoop out small portions of the mixture and roll them into balls or log shapes, about 1 inch in size. Place them on a parchment-lined baking sheet.

  4. Chill: Place the shaped candies in the refrigerator for about 30 minutes to firm up.

  5. Coat with Chocolate: In a microwave-safe bowl, melt the semisweet chocolate chips and vegetable oil together in 30-second intervals, stirring between each, until smooth and completely melted.

  6. Dip the Candies: Once the candy centers are firm, dip each one into the melted chocolate, ensuring it’s completely coated. Return the dipped candies to the parchment paper.

  7. Chill Again: Allow the chocolate coating to set by chilling the candies in the refrigerator for another 30 minutes to an hour.

Notes

  • You can use milk chocolate instead of semisweet chocolate for a sweeter treat.
