Description

Ingredients

Dough:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar (plus extra for rolling)
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • 1 large egg

Filling:

  • 3/4 cup creamy peanut butter
  • 3/4 cup powdered sugar

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the dough: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. In a large mixing bowl, beat granulated sugar, brown sugar, butter, and 1/4 cup peanut butter until fluffy. Add egg and vanilla, mix well. Gradually add dry ingredients to form a dough.
  3. Make the filling: Mix 3/4 cup peanut butter and powdered sugar to form a firm dough. Roll into small balls.
  4. Assemble the cookies: Flatten chocolate dough, place a peanut butter ball, encase it, roll in sugar, and place on baking sheet.
  5. Bake: Bake for 7–9 minutes until slightly cracked. Cool on a wire rack.
