Description

Ingredients

For the muffins:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream or plain Greek yogurt

For the cream cheese filling:

  • 6 ounces cream cheese (softened)
  • ¼ cup granulated sugar
  • ½ teaspoon vanilla extract

For the cinnamon sugar topping:

  • 2 tablespoons granulated sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Preheat the oven and prepare the muffin tin: Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease well.
  2. Prepare the muffin batter: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla. Stir in the sour cream until well blended. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  3. Make the cream cheese filling: In a separate small bowl, mix cream cheese, sugar, and vanilla until smooth.
  4. Assemble the muffins: Spoon a heaping tablespoon of muffin batter into each prepared muffin cup. Add about 1 teaspoon of the cream cheese filling in the center of each, then top with another spoonful of batter, covering the filling.
  5. Add the topping: In a small bowl, mix the topping sugar and cinnamon. Sprinkle evenly over the tops of the muffins.
  6. Bake and cool: Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted in the side (not the cream cheese center) comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack.
