Ingredients
For the muffins:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 ½ teaspoons ground cinnamon
- ½ cup unsalted butter (softened)
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup sour cream or plain Greek yogurt
For the cream cheese filling:
- 6 ounces cream cheese (softened)
- ¼ cup granulated sugar
- ½ teaspoon vanilla extract
For the cinnamon sugar topping:
- 2 tablespoons granulated sugar
- ½ teaspoon ground cinnamon
Instructions
- Preheat the oven and prepare the muffin tin: Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease well.
- Prepare the muffin batter: In a medium bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. In a large bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla. Stir in the sour cream until well blended. Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Make the cream cheese filling: In a separate small bowl, mix cream cheese, sugar, and vanilla until smooth.
- Assemble the muffins: Spoon a heaping tablespoon of muffin batter into each prepared muffin cup. Add about 1 teaspoon of the cream cheese filling in the center of each, then top with another spoonful of batter, covering the filling.
- Add the topping: In a small bowl, mix the topping sugar and cinnamon. Sprinkle evenly over the tops of the muffins.
- Bake and cool: Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted in the side (not the cream cheese center) comes out clean. Cool in the pan for 5 minutes before transferring to a wire rack.
Notes
- For a swirl effect, gently swirl the cream cheese layer into the batter with a toothpick before baking.
- Store muffins in the fridge due to the cream cheese filling.
