Ingredients
Wet Ingredients:
- 1 cup plain Greek yogurt
- 2 large eggs
- 1/4 cup fresh lemon juice
- 2 teaspoons lemon zest
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 1 tablespoon poppy seeds
Dry Ingredients:
- 1/3 cup almond flour
- 2 tablespoons coconut flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- Mix Wet Ingredients: In a mixing bowl, whisk together Greek yogurt, eggs, lemon juice, lemon zest, maple syrup (or honey), and vanilla until smooth. Stir in the poppy seeds.
- Combine Dry Ingredients: In a separate bowl, combine almond flour, coconut flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until fully incorporated.
- Bake: Pour the batter into the prepared baking dish and smooth the top. Bake for 25–28 minutes, or until the center is set and the edges are lightly golden.
- Cool and Slice: Let cool completely in the pan before slicing into bars.
