Description

These Low Sugar Lemon Poppy Seed Greek Yogurt Bars are a healthy and delicious snack or breakfast option. Made with wholesome ingredients like Greek yogurt, fresh lemon juice, and almond flour, these bars are gluten-free and low in added sugar.

Ingredients

Wet Ingredients:

  • 1 cup plain Greek yogurt
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 tablespoon poppy seeds

Dry Ingredients:

  • 1/3 cup almond flour
  • 2 tablespoons coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. Mix Wet Ingredients: In a mixing bowl, whisk together Greek yogurt, eggs, lemon juice, lemon zest, maple syrup (or honey), and vanilla until smooth. Stir in the poppy seeds.
  3. Combine Dry Ingredients: In a separate bowl, combine almond flour, coconut flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture until fully incorporated.
  4. Bake: Pour the batter into the prepared baking dish and smooth the top. Bake for 25–28 minutes, or until the center is set and the edges are lightly golden.
  5. Cool and Slice: Let cool completely in the pan before slicing into bars.

Notes

  • For added sweetness, dust lightly with powdered monk fruit sweetener or serve with whipped Greek yogurt.
  • Store bars in the fridge for a convenient grab-and-go snack or breakfast option.
