Description

This Low Carb Unstuffed Cabbage Casserole is a delicious and easy-to-make dish that is perfect for a comforting weeknight dinner. With savory ground beef or turkey, tender cabbage, and a hint of cheese, this casserole is a satisfying meal that’s low in carbs and packed with flavor.

Ingredients

Ground Beef/Turkey Mixture:

  • 1 pound ground beef or turkey
  • 1 small onion, chopped
  • 2 cloves garlic, minced

Cabbage Mixture:

  • 1 small head green cabbage, chopped (about 6 cups)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1/2 cup tomato sauce
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Topping:

  • 1 cup shredded mozzarella cheese (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C).
  2. Cook the meat: In a large skillet over medium heat, cook the ground beef or turkey until browned. Add onion and garlic, sauté until softened.
  3. Add the cabbage: Stir in cabbage, cook until wilted. Add diced tomatoes, tomato sauce, paprika, oregano, salt, and pepper. Cook for 5 minutes.
  4. Transfer to baking dish: Spread the mixture in a greased 9×13-inch baking dish. Add mozzarella cheese on top if desired.
  5. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly and lightly browned. Let rest before serving.

Notes

  • This dish reheats well and is great for meal prep.
  • You can add riced cauliflower for extra volume or use fire-roasted tomatoes for a smokier flavor.
  • To make it dairy-free, omit the cheese or use a dairy-free alternative.
