All the juicy, cheesy satisfaction of a classic burger—minus the bun. This low carb version layers seasoned beef, crisp lettuce, and fresh toppings into a guilt-free, flavor-packed meal perfect for keto and low-carb lifestyles.
Ingredients
- 1 lb ground beef (80/20 blend)
- Salt and freshly ground black pepper
- 4 slices cheddar or Swiss cheese
- 8 large romaine or butter lettuce leaves
- 4 slices tomato
- 4 slices red onion
- 8 dill pickle chips
- 4 tbsp mayonnaise
- 4 tsp mustard
- 4 tsp sugar-free ketchup
- 1 avocado, sliced (optional)
Instructions
- Form ground beef into 4 burger patties, slightly larger than lettuce leaves. Season both sides with salt and pepper.
- Preheat a skillet or grill to medium-high. Cook patties 3–4 minutes per side, adding cheese after flipping. Cook until cheese is melted and internal temp is 160°F.
- While burgers cook, prep toppings and layer lettuce leaves in pairs to form ‘buns.’
- Assemble burgers: Start with a lettuce base, then patty, tomato, onion, pickles, sauces, avocado (if using), and top lettuce leaf. Wrap in parchment or foil to serve.
Notes
- Use portobello mushrooms instead of lettuce for a heartier ‘bun.’
- Turn into a salad bowl by serving deconstructed over greens.
- Ground turkey or chicken also work—add olive oil for moisture.
