Description

Ingredients

  • 1½ cups Arborio rice
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • ½ cup dry white wine
  • 4 cups lobster or seafood stock, kept warm
  • 1 cup cooked lobster meat, chopped
  • ½ cup grated Parmesan cheese
  • 2 tablespoons heavy cream (optional for extra richness)
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish


Instructions

  1. Saute Aromatics: In a large saucepan, heat olive oil and butter over medium heat. Add shallot and cook until softened. Stir in garlic and Arborio rice, toasting lightly.
  2. Deglaze and Simmer: Pour in the white wine, stirring until mostly absorbed. Add warm stock gradually, stirring and allowing it to absorb before each addition. Cook for about 20 minutes until creamy.
  3. Finish and Serve: Stir in lobster meat, Parmesan, lemon juice, and cream if using. Cook until lobster is heated through and risotto is creamy. Season with salt and pepper. Serve hot, garnished with parsley.
