Description

This Loaded Potato Ranch Chicken Casserole is the ultimate comfort food dish, combining tender chicken, crispy potatoes, gooey cheeses, and savory bacon all in one hearty casserole. Perfect for a family dinner or a cozy weeknight meal.


Ingredients

    Chicken:

  • pounds boneless skinless chicken breasts, cut into bite-sized pieces
  • Potatoes:

  • 3 cups russet potatoes, peeled and diced
  • Seasoning:

  • 2 tablespoons olive oil
  • 1 packet (1 ounce) ranch seasoning mix
  • Cheese:

  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • Additional:

  • 6 slices bacon, cooked and crumbled
  • 2 green onions, sliced
  • Salt and black pepper to taste
  • Chopped parsley for garnish (optional)


Instructions

  1. Preheat the oven: Preheat the oven to 400°F and lightly grease a 9×13-inch baking dish.
  2. Prepare Potatoes: Toss the diced potatoes with olive oil, half of the ranch seasoning, salt, and pepper. Spread in the baking dish and bake for 25–30 minutes.
