Ingredients
Potato Cups:
- 3 large russet potatoes
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
Additional Ingredients:
- 1 cup shredded cheddar cheese
- ½ cup cooked bacon (crumbled)
- ¼ cup sour cream
- 2 tbsp chopped green onions
- Optional: butter or garlic powder for extra flavor
Instructions
- Preheat the oven: Preheat the oven to 400°F (200°C) and lightly grease a muffin tin.
- Prepare potatoes: Peel and cut the potatoes into small cubes. Toss with olive oil, salt, and pepper.
- Fill muffin cups: Divide the potato cubes among the muffin cups, pressing them down gently. Bake for 25–30 minutes until soft.
- Add toppings: Sprinkle each cup with cheddar cheese and bacon. Bake for another 5–7 minutes until cheese melts.
- Serve: Cool slightly, remove from tin, top with sour cream and green onions. Serve warm.
