Description

These Loaded Potato Cups are a delightful appetizer or snack featuring crispy potato cups filled with gooey cheddar cheese, savory bacon, tangy sour cream, and fresh green onions. They are perfect for parties or as a tasty brunch option.

Ingredients

Potato Cups:

  • 3 large russet potatoes
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper

Additional Ingredients:

  • 1 cup shredded cheddar cheese
  • ½ cup cooked bacon (crumbled)
  • ¼ cup sour cream
  • 2 tbsp chopped green onions
  • Optional: butter or garlic powder for extra flavor

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and lightly grease a muffin tin.
  2. Prepare potatoes: Peel and cut the potatoes into small cubes. Toss with olive oil, salt, and pepper.
  3. Fill muffin cups: Divide the potato cubes among the muffin cups, pressing them down gently. Bake for 25–30 minutes until soft.
  4. Add toppings: Sprinkle each cup with cheddar cheese and bacon. Bake for another 5–7 minutes until cheese melts.
  5. Serve: Cool slightly, remove from tin, top with sour cream and green onions. Serve warm.

Notes

  • You can prep the potato cubes in advance and refrigerate until ready to bake.
  • Try different toppings like diced ham or jalapeños for variation.
  • These make a great party appetizer or brunch option.
