Description

This Loaded Cowboy Cheeseburger Casserole is a hearty and indulgent dish that combines all the flavors of a classic cheeseburger in a convenient casserole form. With layers of ground beef, crispy bacon, diced potatoes, and gooey cheddar cheese, this comforting meal is sure to be a hit with the whole family.


Ingredients

For the Casserole:

  • 1 pound ground beef
  • 1/2 pound bacon (chopped)
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 cup ketchup
  • 2 tablespoons barbecue sauce
  • 1 tablespoon yellow mustard
  • 3 cups frozen or fresh diced potatoes (hash browns or home fries)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped pickles (optional)
  • Chopped green onions for garnish


Instructions

  1. Preheat oven: Preheat oven to 375°F.
  2. Cook bacon: In a large skillet over medium heat, cook the bacon until crispy, then transfer to a paper towel-lined plate.
  3. Cook beef and onion: Cook ground beef and onion in the skillet until beef is browned and onion is soft. Add garlic, salt, pepper, and smoked paprika, cooking for 1 more minute.
  4. Add sauces: Mix in ketchup, barbecue sauce, and mustard, then remove from heat.
  5. Combine ingredients: In a large mixing bowl, combine the beef mixture with diced potatoes, half the cheese, and sour cream. Fold in the cooked bacon and pickles if using.
  6. Bake: Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the remaining cheese on top. Bake for 25–30 minutes, or until hot and bubbly and the cheese is melted.
  7. Serve: Garnish with green onions before serving.

Notes

  • Great with a drizzle of ranch or extra BBQ sauce.
