Ingredients

Sweet Potato Boats

  • 2 medium sweet potatoes
  • 4 large eggs
  • 1/2 cup cooked turkey sausage crumbles or cooked bacon bits
  • 1/4 cup shredded cheddar cheese
  • 1/4 avocado, diced
  • 2 tablespoons chopped green onions
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional hot sauce or salsa, for serving


Instructions

  1. Preheat Oven and Prepare Sweet Potatoes: Preheat your oven to 400°F (200°C). Scrub the sweet potatoes thoroughly and prick them several times with a fork to allow steam to escape during baking. Place the sweet potatoes on a baking sheet for roasting.
  2. Bake Sweet Potatoes: Bake the sweet potatoes for 40–50 minutes, or until they are fork-tender when pierced. Remove them from the oven and let cool slightly so they are safe to handle.
  3. Scoop and Season: Slice each sweet potato lengthwise to create halves. Carefully scoop out some of the flesh from each half to create a small well, being careful not to pierce the skin, which will serve as your ‘boat.’ Brush the inside of each boat with olive oil and season with salt and pepper to enhance flavor.
  4. Add Eggs: Crack one egg into each sweet potato well, ensuring the yolk stays intact. This will bake inside the potato, creating a delightful combination of textures.
  5. Bake Again: Return the sweet potato boats to the oven and bake for an additional 12–15 minutes, until the egg whites are fully set, but the yolks remain slightly runny for a creamy texture.
  6. Top and Serve: Remove from the oven and top each boat with cooked turkey sausage or bacon bits, shredded cheddar cheese, diced avocado, and chopped green onions. Add hot sauce or salsa if desired for an extra kick. Serve warm and enjoy!

  • To make this recipe vegetarian, omit the sausage or bacon and substitute with black beans or sautéed spinach.
