Ingredients

Sweet Potato Black Bean Patties:

  • 2 medium sweet potatoes, peeled and cubed
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/2 cup finely chopped red onion
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (plus more for cooking)
  • Zest and juice of 1 lime


Instructions

  1. Boil the sweet potatoes: Boil the sweet potato cubes in a large pot of salted water until fork-tender, about 10 minutes. Drain and let cool slightly.
  2. Mix the ingredients: In a large mixing bowl, mash the sweet potatoes and black beans. Add red onion, garlic, breadcrumbs, cilantro, cumin, paprika, salt, and black pepper. Shape into patties.
  3. Cook the patties: Heat olive oil in a skillet. Cook patties for 3–4 minutes per side until golden brown and heated through.
  4. Prepare the lime drizzle: Whisk together lime juice, lime zest, and olive oil. Drizzle over the cooked patties.
