Ingredients
Sweet Potato Black Bean Patties:
- 2 medium sweet potatoes, peeled and cubed
- 1 (15-ounce) can black beans, drained and rinsed
- 1/2 cup finely chopped red onion
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (plus more for cooking)
- Zest and juice of 1 lime
Instructions
- Boil the sweet potatoes: Boil the sweet potato cubes in a large pot of salted water until fork-tender, about 10 minutes. Drain and let cool slightly.
- Mix the ingredients: In a large mixing bowl, mash the sweet potatoes and black beans. Add red onion, garlic, breadcrumbs, cilantro, cumin, paprika, salt, and black pepper. Shape into patties.
- Cook the patties: Heat olive oil in a skillet. Cook patties for 3–4 minutes per side until golden brown and heated through.
- Prepare the lime drizzle: Whisk together lime juice, lime zest, and olive oil. Drizzle over the cooked patties.

- These patties can be made ahead and stored in the fridge for up to 3 days.
- For a gluten-free version, use gluten-free breadcrumbs.
- Serve over greens, in a bun, or topped with avocado slices.
