Description

Light and Delicious Parmesan Zucchini is a quick, crowd-pleasing side made with tender zucchini rounds topped with crisped parmesan and savory seasonings.


Ingredients

  • 3 medium zucchini
  • 1/2 cup freshly grated parmesan cheese
  • 2 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: chopped fresh parsley or basil for garnish


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and dry zucchini, then slice into 1/2-inch-thick rounds.
  3. Arrange zucchini slices in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder.
  4. Top each round generously with grated parmesan cheese.
  5. Bake for 13–15 minutes until zucchini is tender and cheese is golden and crispy.
  6. Optional: garnish with chopped parsley, basil, or a sprinkle of lemon zest. Serve hot or at room temperature.
