Description
Light and Delicious Parmesan Zucchini is a quick, crowd-pleasing side made with tender zucchini rounds topped with crisped parmesan and savory seasonings.
Ingredients
- 3 medium zucchini
 - 1/2 cup freshly grated parmesan cheese
 - 2 tbsp olive oil
 - 1/2 tsp garlic powder
 - 1/2 tsp salt
 - 1/4 tsp black pepper
 - Optional: chopped fresh parsley or basil for garnish
 
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
 - Wash and dry zucchini, then slice into 1/2-inch-thick rounds.
 - Arrange zucchini slices in a single layer on the baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder.
 - Top each round generously with grated parmesan cheese.
 - Bake for 13–15 minutes until zucchini is tender and cheese is golden and crispy.
 - Optional: garnish with chopped parsley, basil, or a sprinkle of lemon zest. Serve hot or at room temperature.

- Add red pepper flakes for a bit of heat.
 - Pairs well with grilled meats, pasta, or as an appetizer with dip.
 - Serve on skewers or spiral on a platter for creative presentation.
