Ingredients

Main Curry:

  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon chili flakes (optional)
  • 1 1/2 cups dried red lentils, rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 1/2 cups vegetable broth or water
  • 1 teaspoon salt, or to taste
  • juice of 1/2 lemon
  • chopped fresh cilantro for garnish


Instructions

  1. Heat the oil: In a large saucepan over medium heat, sauté the onion until soft and golden. Add garlic and ginger, then spices.
  2. Add ingredients: Stir in lentils, tomatoes, coconut milk, and broth. Simmer until lentils are soft.
  3. Season and garnish: Stir in lemon juice, salt to taste, and garnish with cilantro before serving.

Notes
