Description

A zesty, sweet, no-bake snack mix that’s a citrusy twist on the classic muddy buddies—perfect for summer gatherings or anytime you crave a bright, lemony treat.


Ingredients

  • 6 cups Chex cereal (rice or corn)
  • 1 cup white chocolate chips
  • 2 tbsp unsalted butter
  • 2 tbsp freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • 1/2 tsp vanilla extract
  • 1 1/2 cups powdered sugar
  • 2 tbsp lemonade powder


Instructions

  1. Place Chex cereal in a large mixing bowl and set aside.
  2. In a microwave-safe bowl, combine white chocolate chips, butter, lemon juice, lemon zest, and vanilla extract. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  3. Pour the melted lemon mixture over the cereal and gently fold until all pieces are evenly coated.
  4. In a large zip-top bag, combine powdered sugar and lemonade powder. Add coated cereal, seal, and shake until well coated.
  5. Spread coated cereal on a parchment-lined baking sheet to cool and set.
  6. Once fully cooled, store in an airtight container.
