Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
- Combine Wet Ingredients: In a large bowl, cream together the butter and sugar. Beat in the egg, vanilla extract, lemon juice, and lemon zest until well combined.

- Shape and Bake: Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated sugar. Place on baking sheets and bake for 9–11 minutes until lightly golden.
- Cool and Serve: Allow the cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
