Ingredients
Pizza Base
- 1 ball of pizza dough (about 12 inches)
- 1 tablespoon olive oil
Cheese and Toppings
- 1/2 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 garlic clove, minced
- 1 teaspoon lemon zest
- 1 small lemon, thinly sliced and seeds removed
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 teaspoon salt
- Freshly ground black pepper to taste
- Fresh arugula or basil for topping
Instructions
- Preheat the Oven: Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat thoroughly. This ensures a crisp, evenly cooked crust.
- Prepare the Dough: On a floured surface, roll out the pizza dough to a 12-inch circle. Transfer the dough carefully onto a piece of parchment paper to make it easy to handle.
- Oil the Dough: Lightly brush the rolled-out dough with olive oil to enhance browning and add flavor.
- Make the Ricotta Mixture: In a small bowl, combine the ricotta cheese with minced garlic, lemon zest, salt, and a pinch of black pepper, mixing well for a fragrant, creamy spread.
- Assemble the Pizza: Spread the ricotta mixture evenly over the dough, leaving a small border around the edges. Then, sprinkle shredded mozzarella and grated Parmesan cheese on top. Arrange thin lemon slices evenly over the cheeses, and add red pepper flakes if you like a bit of heat.
- Bake the Pizza: Using the parchment paper, transfer the pizza onto the preheated pizza stone or baking sheet. Bake for 10–12 minutes until the crust is golden brown and the cheese is melted and bubbly.
- Add Fresh Herbs and Serve: Remove the pizza from the oven and top with fresh arugula or basil for a peppery, fresh finish. Slice and serve immediately for the best flavor and texture.
Notes
- Use Meyer lemons for a sweeter, less bitter lemon flavor that complements the cheese beautifully.
- Consider drizzling honey or a sprinkle of chili oil over the pizza after baking to add a delightful contrast of flavors.
