Description

A bright, zesty twist on classic pizza, this Lemon Pizza features a blend of creamy cheeses, crispy golden crust, and slices of fresh lemon for an unforgettable flavor that’s both sophisticated and surprisingly comforting.

Ingredients

  • 1 pizza dough (homemade or store-bought)
  • 2 tbsp olive oil (plus more for finishing)
  • 1 fresh lemon, very thinly sliced or zested
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ricotta cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil leaves, torn
  • Salt and black pepper, to taste
  • Optional: crushed red pepper flakes

Instructions

  1. Preheat oven to 475°F (245°C). Roll out pizza dough on a floured surface to 12 inches and place on a parchment-lined baking sheet or pizza stone.
  2. Brush dough with olive oil. Evenly scatter mozzarella cheese. Dot with spoonfuls of ricotta and sprinkle Parmesan over the top.
  3. Add thin lemon slices (or zest) evenly across the pizza. Avoid overlapping too much.
  4. Bake for 12–15 minutes, until crust is golden and cheese is bubbling. Watch to avoid burning the lemon slices.
  5. Remove from oven and garnish with torn basil, salt, pepper, and optional red pepper flakes. Drizzle with more olive oil or lemon zest if desired. Slice and serve immediately.

Notes

  • Use lemon zest instead of slices for a subtler flavor.
  • Substitute preserved lemon for fresh if desired—use sparingly and rinse to reduce saltiness.
  • Fresh mozzarella offers creaminess, while low-moisture mozzarella provides a classic pizza melt—use one or both.
