Ingredients

Chicken

  • 2 boneless, skinless chicken breasts, cut in half lengthwise
  • Salt, to taste
  • ½ tablespoon lemon pepper seasoning
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided

Sauce

  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • ⅔ cup chicken broth
  • ½ cup heavy cream
  • ½ tablespoon lemon pepper seasoning


Instructions

  1. Sear Chicken: Season the chicken cutlets with salt and lemon pepper seasoning. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Add the chicken and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  2. Make Sauce: Add the remaining tablespoon of butter to the skillet. Once melted, stir in the minced garlic and all-purpose flour. Cook for 30 seconds to 1 minute while stirring constantly to create a roux.
  3. Simmer and Thicken: Gradually pour in the chicken broth and heavy cream while whisking continuously until the mixture is smooth. Add the remaining lemon pepper seasoning and bring the sauce to a gentle simmer.
  4. Return Chicken and Finish Cooking: Place the chicken back into the skillet along with any juices that have accumulated. Simmer for 4-5 minutes or until the chicken is cooked through with an internal temperature of 165°F and the sauce has thickened. Adjust heat as necessary to keep a gentle simmer.
