Ingredients
Chicken:
- 1 1/2 pounds boneless skinless chicken breasts, cut into strips or bite-sized pieces
Asparagus:
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
Seasoning:
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 teaspoons lemon pepper seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Juice and zest of 1 lemon
Garnish:
- Lemon slices and chopped parsley for garnish (optional)
Instructions
- Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet. Add chicken, season with lemon pepper, garlic powder, salt, and pepper. Cook for 6–8 minutes until browned. Set aside.
- Cook Asparagus: In the same skillet, add remaining olive oil and butter. Cook asparagus for 4–5 minutes until tender.
- Combine and Serve: Return chicken to the pan, add lemon juice and zest. Toss everything until heated through. Serve garnished with lemon slices and parsley.
Notes
- Serve with rice, quinoa, or mashed potatoes for a complete meal.
- You can use green beans or broccoli as a substitute for asparagus.
