Description

This Lemon Parmesan Pearl Couscous recipe is a delightful Mediterranean-inspired side dish that’s quick and easy to make. The combination of citrusy lemon, savory Parmesan, and fluffy pearl couscous makes for a flavorful and satisfying accompaniment to any meal.

Ingredients

Ingredients:

  • 1 tablespoon olive oil
  • 1 cup pearl couscous (Israeli couscous)
  • 1 3/4 cups vegetable or chicken broth
  • 1/2 teaspoon salt
  • 1 tablespoon unsalted butter
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh parsley
  • Black pepper to taste

Instructions

  1. Heat olive oil: In a medium saucepan over medium heat, heat olive oil.
  2. Add couscous: Add pearl couscous and toast for 2–3 minutes until lightly golden.
  3. Cook couscous: Pour in broth, add salt, bring to a boil, then cover and simmer for 10 minutes until liquid is absorbed and couscous is tender.
  4. Finish dish: Remove from heat, stir in butter, Parmesan, lemon juice, lemon zest, and parsley. Season with black pepper, fluff with a fork, and serve.

Notes

  • Add green peas, spinach, or roasted vegetables for a heartier side.
  • For a dairy-free version, omit Parmesan and butter or use plant-based alternatives.
