Description

These Lemon Oatmeal No-Bake Cookies are a delightful treat that brings together the zesty freshness of lemons with the wholesome heartiness of oats. Easy to make and bursting with citrus flavor, these cookies are perfect for a quick sweet fix!


Ingredients

Main Ingredients:

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup milk

Additional Ingredients:

  • 2 tablespoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • 3 cups quick oats
  • 1/2 teaspoon vanilla extract
  • 1/2 cup shredded sweetened coconut (optional)


Instructions

  1. Cook Sugar Mixture: In a medium saucepan over medium heat, combine butter, granulated sugar, brown sugar, milk, lemon zest, lemon juice, and salt. Bring to a gentle boil, stirring frequently. Boil for 1–2 minutes, then remove from heat.
  2. Add Oats and Coconut: Stir in vanilla extract. Add oats and coconut, mixing until fully coated.
  3. Shape Cookies: Drop spoonfuls of the mixture onto a parchment-lined baking sheet. Flatten slightly with the back of a spoon.
  4. Cool and Store: Allow to cool at room temperature for 30–45 minutes, or until set. Store in an airtight container.

Notes
