Ingredients
Main Ingredients:
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup milk
Additional Ingredients:
- 2 tablespoons lemon zest
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon salt
- 3 cups quick oats
- 1/2 teaspoon vanilla extract
- 1/2 cup shredded sweetened coconut (optional)
Instructions
- Cook Sugar Mixture: In a medium saucepan over medium heat, combine butter, granulated sugar, brown sugar, milk, lemon zest, lemon juice, and salt. Bring to a gentle boil, stirring frequently. Boil for 1–2 minutes, then remove from heat.
- Add Oats and Coconut: Stir in vanilla extract. Add oats and coconut, mixing until fully coated.
- Shape Cookies: Drop spoonfuls of the mixture onto a parchment-lined baking sheet. Flatten slightly with the back of a spoon.
- Cool and Store: Allow to cool at room temperature for 30–45 minutes, or until set. Store in an airtight container.
Notes
- For extra brightness, drizzle with a lemon glaze made from powdered sugar and lemon juice.
- Use old-fashioned oats for a chewier texture, or quick oats for a smoother finish.
