Description

Indulge in the refreshing tang of lemon with this delightful Lemon Lush dessert. Layers of buttery pecan crust, creamy cheesecake, zesty lemon pudding, and fluffy whipped topping create a luscious treat that’s perfect for any occasion.


Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup chopped pecans

For the Filling:

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 container (8 oz) whipped topping, divided
  • 2 boxes (3.4 oz each) instant lemon pudding mix
  • 3 cups cold milk
  • Lemon zest for garnish (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 350°F.
  2. Prepare Crust: Mix flour, butter, and pecans until crumbly. Press into a 9×13-inch baking dish and bake until golden.
  3. Make Cream Cheese Layer: Beat cream cheese with sugar and vanilla, then fold in 1 cup of whipped topping. Spread over the cooled crust.
  4. Prepare Lemon Pudding: Whisk lemon pudding mixes with cold milk until thickened. Spread over the cream cheese layer.
  5. Top with Whipped Topping: Add the remaining whipped topping over the lemon pudding layer and smooth the surface.
  6. Chill and Serve: Chill for at least 2 hours before serving. Garnish with lemon zest if desired.
