Ingredients
For the Crust:
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/2 cup chopped pecans
For the Filling:
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 container (8 oz) whipped topping, divided
- 2 boxes (3.4 oz each) instant lemon pudding mix
- 3 cups cold milk
- Lemon zest for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 350°F.
- Prepare Crust: Mix flour, butter, and pecans until crumbly. Press into a 9×13-inch baking dish and bake until golden.
- Make Cream Cheese Layer: Beat cream cheese with sugar and vanilla, then fold in 1 cup of whipped topping. Spread over the cooled crust.
- Prepare Lemon Pudding: Whisk lemon pudding mixes with cold milk until thickened. Spread over the cream cheese layer.
