Crust

Cream Cheese Layer

  • 1 cup powdered sugar
  • 1 (8 oz) container whipped topping, divided

Lemon Pudding Layer

  • 2 (3.4 oz) packages instant lemon pudding mix
  • 3 cups cold milk
  • 1 tablespoon lemon zest (optional, for extra brightness)


Instructions

  1. Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the flour, softened butter, and chopped pecans, mixing until the mixture becomes crumbly. Press this evenly into the bottom of a 9×13-inch baking dish to form the crust. Bake for 15–18 minutes or until it turns lightly golden. Let the crust cool completely before proceeding.
  2. Make the Cream Cheese Layer: In a separate bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Gently fold in 1 cup of the whipped topping until fully incorporated. Spread this cream cheese mixture evenly over the cooled crust.
  3. Prepare the Lemon Pudding Layer: In another bowl, whisk the instant lemon pudding mix together with the cold milk for about 2 minutes, or until the pudding thickens. Spread this pudding layer evenly over the cream cheese layer in the baking dish.
