Ingredients
Crust
- 1 cup all-purpose flour
- ½ cup unsalted butter, softened
- ½ cup chopped pecans
Cream Cheese Layer
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) container whipped topping, divided
Lemon Pudding Layer
- 2 (3.4 oz) packages instant lemon pudding mix
- 3 cups cold milk
- 1 tablespoon lemon zest (optional, for extra brightness)
Instructions
- Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the flour, softened butter, and chopped pecans, mixing until the mixture becomes crumbly. Press this evenly into the bottom of a 9×13-inch baking dish to form the crust. Bake for 15–18 minutes or until it turns lightly golden. Let the crust cool completely before proceeding.
- Make the Cream Cheese Layer: In a separate bowl, beat the softened cream cheese with the powdered sugar until smooth and creamy. Gently fold in 1 cup of the whipped topping until fully incorporated. Spread this cream cheese mixture evenly over the cooled crust.
- Prepare the Lemon Pudding Layer: In another bowl, whisk the instant lemon pudding mix together with the cold milk for about 2 minutes, or until the pudding thickens. Spread this pudding layer evenly over the cream cheese layer in the baking dish.
- Add the Final Whipped Topping: Top the pudding with the remaining whipped topping, spreading it evenly to cover the surface completely.
- Chill and Serve: Refrigerate the assembled dessert for at least 4 hours to allow it to set properly. Before serving, garnish with lemon zest if desired to add extra brightness and flavor.
Notes
- You can substitute vanilla pudding for a milder flavor.
- Use homemade whipped cream instead of store-bought whipped topping for a richer dessert.
- Best served cold and kept refrigerated until ready to enjoy.
