Description

Ingredients

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup chopped pecans

For the Cream Cheese Layer:

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces whipped topping (such as Cool Whip)

For the Lemon Pudding Layer:

  • 2 (3.4-ounce) boxes instant lemon pudding mix
  • 3 cups cold milk

For Garnish:

  • Additional whipped topping
  • Lemon zest (optional)

Instructions

  1. Preheat the oven: to 350°F. Mix flour, butter, and pecans for the crust. Press into a baking dish and bake.
  2. Prepare Cream Cheese Layer: Beat cream cheese, sugar, and vanilla. Fold in whipped topping and spread over crust.
  3. Make Lemon Pudding Layer: Whisk pudding mix with milk until thickened. Spread over cream cheese layer.
