Description

A delightful recipe for Lemon Herb Grilled Chicken that’s bursting with fresh flavors. Perfect for a quick and healthy meal on the grill.

Ingredients

Marinade:

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 garlic cloves (minced)
  • 1 tablespoon fresh chopped rosemary (or 1 teaspoon dried)
  • 1 tablespoon fresh chopped thyme (or 1 teaspoon dried)
  • 1 teaspoon Dijon mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Mix Marinade: In a bowl, combine olive oil, lemon juice, lemon zest, garlic, rosemary, thyme, Dijon mustard, salt, and pepper.
  2. Marinate Chicken: Coat chicken in the marinade, refrigerate for at least 30 minutes.
  3. Grill Chicken: Preheat grill, cook chicken for 5–7 minutes per side until cooked through.
  4. Rest and Serve: Let the chicken rest before slicing and serving.

Notes

  • This marinade works well with bone-in chicken too.
  • Leftover chicken is great for salads or wraps.
  • Add red pepper flakes for a spicy kick.
