Description

This Lemon Herb Grilled Chicken recipe features tender, juicy boneless chicken breasts marinated in a zesty blend of fresh lemon juice, olive oil, garlic, rosemary, thyme, and lemon zest, then grilled to perfection. It’s a simple yet flavorful dish perfect for a healthy weeknight dinner or outdoor cookout.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts

Marinade

  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon

Instructions

  1. Prepare Marinade: In a small bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, salt, pepper, and lemon zest to create a vibrant, flavorful marinade.
  2. Marinate Chicken: Place chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, ideally 2-4 hours to enhance flavor and tenderness.
  3. Preheat Grill: Heat your grill to medium-high heat to prepare for cooking the chicken.
  4. Remove & Discard Marinade: Take the chicken out of the marinade and discard any remaining marinade to prevent cross-contamination during cooking.
  5. Grill Chicken: Place chicken breasts on the grill. Cook for 6-7 minutes on each side or until the internal temperature safely reaches 165°F (75°C) and the meat is nicely charred on the outside.
  6. Rest & Serve: Let the grilled chicken rest for a few minutes before serving to allow the juices to redistribute, ensuring moist and flavorful bites.

Notes

  • For best results, marinate chicken for at least 2 hours or overnight.
  • Use a meat thermometer to ensure chicken is cooked safely without drying out.
  • Fresh herbs provide the best aroma; dried herbs can be substituted but use less quantity.
  • If you don’t have a grill, this recipe can be adapted for stovetop grilling using a grill pan.
