Description

A light, creamy, and zesty no-bake dessert made with lemon Jell-O, cook & serve lemon pudding, and Cool Whip. It’s a sunshiney treat perfect for summer gatherings or any sweet craving.


Ingredients

  • 1 large box lemon Jell-O (6 oz)
  • 2 cups boiling water
  • 1 cup cold water
  • 1 package cook & serve lemon pie filling mix
  • 1 tub Cool Whip (8 oz), thawed
  • Whipped cream (optional, for garnish)
  • Fresh lemon slices (optional, for garnish)


Instructions

  1. Dissolve the lemon Jell-O in 2 cups of boiling water in a large mixing bowl. Stir until completely dissolved.
  2. Add 1 cup of cold water and mix well. Refrigerate until slightly thickened but not fully set (about 30–40 minutes).
  3. While the Jell-O is chilling, cook the lemon pie filling according to the package directions. Cool completely with plastic wrap on the surface to prevent skin.
  4. Gently fold the cooled pie filling into the thickened Jell-O until well blended and smooth.
  5. Add the Cool Whip and fold gently to maintain the fluffy texture.
  6. Spoon the mixture into a large bowl or individual cups. Chill for at least 1 hour until fully set.
  7. Before serving, garnish with whipped cream and lemon slices if desired.

Notes

  • Ensure Jell-O is at the ‘wobbly’ stage before combining with other ingredients for best texture.
  • Do not substitute with instant pudding; it won’t thicken or blend correctly.
  • Cool all components fully before mixing to maintain structure.
  • For variation, fold in drained crushed pineapple or fresh berries, or serve over a graham cracker crust.
