Ingredients
For the bread:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (softened)
- 3/4 cup granulated sugar
- 2 large eggs
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
For the cream cheese layer:
- 8 oz cream cheese (softened)
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
For the glaze:
- 1/2 cup powdered sugar
- 1–2 tablespoons fresh lemon juice
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Prepare the lemon batter: In a large bowl, beat the butter and sugar, then add the eggs one at a time. Mix in the lemon juice, lemon zest, sour cream, and vanilla. Gradually add the dry ingredients and mix until combined.
- Make the cream cheese layer: In a separate bowl, beat the cream cheese, sugar, egg, and vanilla until smooth.
- Layer the batter: Pour half of the lemon batter into the prepared pan, top with the cream cheese layer, and then add the remaining lemon batter.
- Bake: Bake for 50–60 minutes until a toothpick inserted into the center comes out clean.
- Glaze: Whisk powdered sugar and lemon juice for the glaze. Drizzle over the cooled bread.
Notes
- For extra lemon flavor, consider adding a few drops of lemon extract to the batter or the glaze.
