Description

This Lemon Cream Cheese Bread is a delightful treat that combines the tangy flavors of lemon with a rich cream cheese layer, all topped with a sweet glaze. Perfect for a spring dessert or any time you crave a flavorful and moist loaf.

Ingredients

For the bread:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

For the cream cheese layer:

  • 8 oz cream cheese (softened)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract

For the glaze:

  • 1/2 cup powdered sugar
  • 12 tablespoons fresh lemon juice

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Prepare the lemon batter: In a large bowl, beat the butter and sugar, then add the eggs one at a time. Mix in the lemon juice, lemon zest, sour cream, and vanilla. Gradually add the dry ingredients and mix until combined.
  4. Make the cream cheese layer: In a separate bowl, beat the cream cheese, sugar, egg, and vanilla until smooth.
  5. Layer the batter: Pour half of the lemon batter into the prepared pan, top with the cream cheese layer, and then add the remaining lemon batter.
  6. Bake: Bake for 50–60 minutes until a toothpick inserted into the center comes out clean.
  7. Glaze: Whisk powdered sugar and lemon juice for the glaze. Drizzle over the cooled bread.

Notes

  • For extra lemon flavor, consider adding a few drops of lemon extract to the batter or the glaze.
  • This bread tastes even better the next day once chilled and set.
