Ingredients

Cobbler Topping:

  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

Lemon Filling:

  • 1 1/2 cups lemon pie filling or lemon curd
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Pour melted butter into a 9×9-inch baking dish.
  2. Mix dry ingredients: In a mixing bowl, combine flour, granulated sugar, lemon zest, baking powder, and salt. Add milk and vanilla extract, stir until just combined.
  3. Layering: Pour batter over melted butter, do not stir. Spoon lemon pie filling or curd evenly over the batter, do not stir.
  4. Bake: Bake for 40–45 minutes until golden and bubbly. Cool slightly before serving. Dust with powdered sugar if desired.
