Ingredients
Cobbler Topping:
- 1/2 cup unsalted butter (melted)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon lemon zest
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 teaspoon vanilla extract
Lemon Filling:
- 1 1/2 cups lemon pie filling or lemon curd
- Powdered sugar (for dusting, optional)
Instructions
- Preheat oven: Preheat oven to 350°F (175°C). Pour melted butter into a 9×9-inch baking dish.
- Mix dry ingredients: In a mixing bowl, combine flour, granulated sugar, lemon zest, baking powder, and salt. Add milk and vanilla extract, stir until just combined.
- Layering: Pour batter over melted butter, do not stir. Spoon lemon pie filling or curd evenly over the batter, do not stir.
- Bake: Bake for 40–45 minutes until golden and bubbly. Cool slightly before serving. Dust with powdered sugar if desired.
