Description

A zesty and creamy lemon chicken pasta that’s perfect for a light yet satisfying meal. Tender chicken breast is paired with pasta and a rich lemon-garlic cream sauce.


Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, sliced
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 lemon, zested and juiced
  • 12 oz fettuccine or pasta of choice
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with salt and pepper and cook until golden and cooked through, about 6-8 minutes. Remove from skillet and set aside.
  3. In the same skillet, add garlic, Italian seasoning, and red pepper flakes. Sauté for 1 minute until fragrant.
  4. Stir in heavy cream, chicken broth, and Parmesan cheese. Bring to a simmer and cook until slightly thickened, about 3-5 minutes.
  5. Add lemon zest and juice to the sauce. Stir well to combine.
  6. Return chicken to the skillet and add the cooked pasta. Toss to coat in the sauce.
  7. Cook for another 2-3 minutes until everything is heated through and well mixed.
  8. Garnish with chopped parsley and additional Parmesan if desired. Serve warm.

Notes

  • Use freshly squeezed lemon juice for the best flavor.
  • You can substitute chicken with shrimp for a seafood version.
  • Adjust the lemon juice amount to your taste preference.
