Ingredients
Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
Cheesecake Filling:
- 16 oz cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 1/4 cup sour cream
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- Powdered sugar for dusting (optional)
Instructions
- Prepare the Crust: Preheat the oven to 325°F (163°C) and line an 8×8-inch baking dish with parchment paper. Mix graham cracker crumbs, sugar, and melted butter. Press into the dish and bake for 10 minutes.
- Make the Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, lemon juice, zest, and vanilla.
- Bake: Pour the filling over the crust and bake for 30–35 minutes until set. Cool, refrigerate for at least 3 hours, then cut into bars.
