Description

This Lemon Blueberry Dessert Lasagna is a refreshing no-bake layered treat perfect for summer gatherings. It features a buttery Golden Oreo crust, a creamy cream cheese layer, tart lemon pudding, and sweet blueberry filling topped with whipped topping and fresh lemon zest for a vibrant and delicious dessert.

Ingredients

Crust

  • 1 (14.3-ounce) package Golden Oreos (crushed, about 36 cookies)
  • ½ cup unsalted butter (melted)

Cream Cheese Layer

  • 1 (8-ounce) package cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 (8-ounce) tub whipped topping (thawed)

Lemon Pudding Layer

  • 2 (3.4-ounce) packages instant lemon pudding mix
  • 2½ cups cold milk

Blueberry Layer

  • 1½ cups blueberry pie filling
  • 1 cup fresh blueberries

Garnish

  • Additional whipped topping
  • Lemon zest

Instructions

  1. Prepare the Crust: In a medium bowl, mix the crushed Golden Oreos with melted butter until the mixture is evenly coated. Press this mixture firmly into the bottom of a 9×13-inch dish to form an even crust base.
  2. Make Cream Cheese Layer: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Gently fold in 1 cup of the whipped topping, then spread this creamy mixture evenly over the Oreo crust layer.
  3. Prepare Lemon Pudding: In a separate bowl, whisk the instant lemon pudding mix with 2½ cups of cold milk for 2 to 3 minutes until the mixture thickens. Pour and spread the lemon pudding evenly over the cream cheese layer.
  4. Add Blueberry Layers: Spoon the blueberry pie filling over the lemon pudding, then evenly sprinkle fresh blueberries on top of the pie filling layer.
  5. Top with Whipped Topping: Spread the remaining whipped topping over the entire dessert, smoothing the surface for an even finish.
  6. Chill: Refrigerate the dessert for at least 4 hours, or preferably overnight, to allow layers to set and flavors to meld.
  7. Garnish and Serve: Before serving, garnish with additional whipped topping, fresh blueberries, and lemon zest for added flavor and attractive presentation.

Notes

  • You can use homemade blueberry compote instead of store-bought blueberry pie filling for a fresher taste.
  • For a firmer crust, chill the Oreo crust for 10 minutes in the refrigerator before layering the cream cheese mixture.
  • Make sure the cream cheese is fully softened to avoid lumps in the cream cheese layer.
  • The dessert is best served chilled and consumed within 2 days for optimal freshness.
