Description

Ingredients

Dry Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Wet Ingredients:

  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • ½ cup milk
  • 1 cup fresh or frozen blueberries (tossed with 1 tablespoon flour)


Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Prepare dry ingredients: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. Mix wet ingredients: In a large bowl, cream the butter and sugar. Beat in eggs, vanilla, lemon juice, and zest.
  4. Combine: Alternate adding flour mixture and milk to wet ingredients. Fold in blueberries.
