These Lemon & Coriander Tofu Skewers are a vibrant and flavorful vegetarian dish perfect for a light meal or appetizer. The tofu is marinated in a zesty lemon and coriander blend with hints of cumin and garlic, then grilled or baked to achieve a deliciously charred exterior and tender inside.
Ingredients
Tofu and Marinade
- 400g firm tofu, pressed and cubed
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp olive oil
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tbsp fresh coriander, chopped
- 1 tsp ground cumin
- 1/2 tsp chili flakes (optional)
- Salt and pepper to taste

Instructions
- Prepare the Marinade: In a bowl, mix together lemon juice, olive oil, soy sauce, minced garlic, chopped coriander, ground cumin, chili flakes, salt, and pepper until well combined to create flavorful marinade.
- Marinate the Tofu: Add the cubed firm tofu to the marinade and gently toss to coat all pieces evenly. Cover and allow to marinate for at least 30 minutes to absorb the flavors.
- Skewer the Tofu: Thread the marinated tofu cubes onto wooden or metal skewers, spacing them slightly apart for even cooking.
- Preheat Grill or Oven: If using a grill, preheat to medium-high heat (about 200°C/390°F). Alternatively, preheat your oven to 200°C (390°F) and line a baking tray with parchment paper.
- Cook the Skewers: Grill the tofu skewers for 10-15 minutes, turning occasionally until the tofu is golden brown and slightly charred. If baking, place the skewers on the prepared tray and bake for 20 minutes, turning halfway through to ensure even cooking.
- Serve: Remove the skewers from heat and serve hot with a fresh side salad or steamed rice for a complete meal.
Notes
- Pressing tofu beforehand is essential to remove excess moisture allowing better marinade absorption and sturdier skewers.
- Wooden skewers should be soaked in water for 30 minutes before grilling to prevent burning.
- Adjust chili flakes quantity or omit for a milder taste.
- For a smoky flavor, grilling is preferred over baking.
