Ingredients
Oatmeal Cake
- 2 1/2 cups boiling water
- 2 cups quick cooking oats
- 1 cup butter or margarine
- 2 cups sugar
- 2 cups brown sugar
- 2 teaspoons vanilla extract
- 4 large eggs
- 3 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
Frosting
- 1 cup butter (melted)
- 2 cups brown sugar
- 6 tablespoons half and half (or evaporated milk)
- 1 cup chopped or broken walnuts (can substitute pecans)
- 3 cups shredded or flaked sweetened coconut
Instructions
- Soak Oats: Preheat your oven to 350°F (175°C). Pour the boiling water over the quick cooking oats in a bowl, cover, and let it stand for 20 minutes until the oats are softened and cool enough to handle.
- Prepare Cake Batter: In a mixing bowl, beat the butter or margarine until creamy. Gradually add both the sugar and brown sugar; continue beating until the mixture is light and fluffy. Blend in the vanilla extract and eggs one at a time, mixing well after each addition.
- Combine Dry Ingredients: To the oat mixture, add the flour, baking soda, salt, cinnamon, and nutmeg. Stir thoroughly to create a consistent batter.
- Bake the Cake: Pour the batter into a greased 9 x 13-inch cake pan and bake in the preheated oven for 1 hour. After baking, remove from oven and allow the cake to cool.
- Make Frosting: In a saucepan or heat-safe bowl, combine the melted butter, brown sugar, half and half, chopped walnuts, and shredded sweetened coconut. Mix well to combine all ingredients.
- Frost the Cake: Spread the frosting mixture evenly over the cooled cake. Place the cake under the oven broiler just until the frosting becomes bubbly and slightly caramelized—watch carefully to avoid burning.
- Serve: The Lazy Daisy Oatmeal Cake can be served warm or at room temperature, according to preference.
Notes
- Quick cooking oats are preferred for a tender texture; avoid using steel-cut oats.
- Butter or margarine can be used interchangeably based on dietary preference.
- Be cautious when broiling the frosting—keep a close eye to prevent burning.
- Half and half can be substituted with evaporated milk without altering the flavor significantly.
- For nut-free version, omit walnuts and consider adding more coconut or seeds.
- Allowing the cake to cool before frosting prevents the topping from melting and becoming too runny.
