Description
This Lazy Chicken Parmesan Grilled Cheese combines gooey cheese, tangy marinara, and shredded chicken between golden buttery bread for a crispy, cheesy comfort meal.
Ingredients
- 2 cups cooked shredded chicken (rotisserie or leftover roasted chicken)
- 1/2 cup marinara sauce
- 1 1/2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 8 slices Italian bread or sourdough
- 4 tablespoons butter, softened
- 1 teaspoon Italian seasoning or fresh basil (optional)
Instructions
- In a bowl, mix shredded chicken with just enough marinara sauce to coat without making it too saucy. Stir in shredded mozzarella and grated Parmesan. Optionally, add a pinch of Italian seasoning.
- Spread a generous layer of softened butter on one side of each bread slice.
- Place half of the bread slices, buttered side down, on a work surface. Add a generous scoop of the chicken mixture on each, then top with extra mozzarella and Parmesan if desired. Top with another bread slice, buttered side up.
- Heat a large skillet or griddle over medium heat. Grill sandwiches, pressing with a spatula, until golden and crispy on both sides and cheese is melted, about 3–4 minutes per side. Adjust heat to prevent burning.
- Let sandwiches rest for a minute, then slice and serve hot.
Notes
- Garnish with fresh basil, parsley, extra Parmesan, or a drizzle of olive oil for added flair.
- Serve with a green salad, tomato soup, or potato chips for a complete meal.
- Cut into strips for dipping, or serve slider-style for appetizers.
- Store leftovers in the fridge for up to 2 days; reheat in a skillet for best texture.
- Freeze assembled (uncooked) sandwiches wrapped in parchment and plastic wrap for make-ahead convenience.
- Substitute eggplant or mushrooms for a vegetarian version.
- Chopped chicken nuggets or tenders can be used as a shortcut.
- Kid-friendly and great for dipping in extra marinara.
