Description

This Lazy Chicken Parmesan Grilled Cheese combines gooey cheese, tangy marinara, and shredded chicken between golden buttery bread for a crispy, cheesy comfort meal.


Ingredients

  • 2 cups cooked shredded chicken (rotisserie or leftover roasted chicken)
  • 1/2 cup marinara sauce
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 8 slices Italian bread or sourdough
  • 4 tablespoons butter, softened
  • 1 teaspoon Italian seasoning or fresh basil (optional)


Instructions

  1. In a bowl, mix shredded chicken with just enough marinara sauce to coat without making it too saucy. Stir in shredded mozzarella and grated Parmesan. Optionally, add a pinch of Italian seasoning.
  2. Spread a generous layer of softened butter on one side of each bread slice.
  3. Place half of the bread slices, buttered side down, on a work surface. Add a generous scoop of the chicken mixture on each, then top with extra mozzarella and Parmesan if desired. Top with another bread slice, buttered side up.
  4. Heat a large skillet or griddle over medium heat. Grill sandwiches, pressing with a spatula, until golden and crispy on both sides and cheese is melted, about 3–4 minutes per side. Adjust heat to prevent burning.
  5. Let sandwiches rest for a minute, then slice and serve hot.

Notes

  • Garnish with fresh basil, parsley, extra Parmesan, or a drizzle of olive oil for added flair.
