Description

This Lazy Chicken Parmesan Grilled Cheese recipe combines the classic flavors of chicken Parmesan with the comfort of a grilled cheese sandwich. It’s a quick and easy meal that’s perfect for a busy weeknight.


Ingredients

For the Breaded Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 eggs
  • 1/4 cup milk
  • 2 tbsp olive oil

For the Sandwich:

  • 4 slices of bread
  • 8 slices of mozzarella cheese
  • 1 cup marinara sauce
  • Butter for grilling

Instructions

  1. Breaded Chicken: Preheat oven to 375°F. In a bowl, mix breadcrumbs, Parmesan, Italian seasoning, salt, and pepper. In another bowl, whisk eggs and milk. Dip chicken in egg mixture, then coat with breadcrumb mixture. Heat oil in a skillet, brown chicken on both sides, then bake for 15-20 mins.
  2. Assemble: Take 2 slices of bread, top each with 2 slices of mozzarella. Place chicken on top, spoon marinara sauce, add 2 more slices of mozzarella, and cover with another slice of bread.
  3. Grill: Butter outer bread slices, grill in a skillet over medium heat until golden brown and cheese melts.

Notes

  • You can use pre-cooked chicken tenders to save time.
  • Experiment with different cheeses like provolone or cheddar.
