This Lazy Chicken Parmesan Grilled Cheese recipe combines the classic flavors of chicken Parmesan with the comfort of a grilled cheese sandwich. It’s a quick and easy meal that’s perfect for a busy weeknight.
Ingredients
For the Breaded Chicken:
- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 eggs
- 1/4 cup milk
- 2 tbsp olive oil
For the Sandwich:
- 4 slices of bread
- 8 slices of mozzarella cheese
- 1 cup marinara sauce
- Butter for grilling
Instructions
- Breaded Chicken: Preheat oven to 375°F. In a bowl, mix breadcrumbs, Parmesan, Italian seasoning, salt, and pepper. In another bowl, whisk eggs and milk. Dip chicken in egg mixture, then coat with breadcrumb mixture. Heat oil in a skillet, brown chicken on both sides, then bake for 15-20 mins.
- Assemble: Take 2 slices of bread, top each with 2 slices of mozzarella. Place chicken on top, spoon marinara sauce, add 2 more slices of mozzarella, and cover with another slice of bread.
- Grill: Butter outer bread slices, grill in a skillet over medium heat until golden brown and cheese melts.
Notes
- You can use pre-cooked chicken tenders to save time.
- Experiment with different cheeses like provolone or cheddar.
