This hearty Lasagna Soup combines all the flavors of traditional lasagna in a comforting, easy-to-make soup. Perfect for a cozy family dinner or to warm up on a chilly day.
Ingredients
Meat Sauce:
- 1 pound ground beef or Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon red pepper flakes (optional)
- 1 tablespoon tomato paste
- 1 can (28 oz) crushed tomatoes
- 4 cups beef or chicken broth
- 1 cup tomato sauce
Additional Ingredients:
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 ½ cups shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Prepare Meat Sauce: In a large pot, brown ground beef or sausage in olive oil. Add onion, garlic, oregano, basil, red pepper flakes, and tomato paste. Cook until fragrant.
- Simmer: Stir in crushed tomatoes, tomato sauce, and broth. Simmer for 15 minutes.
- Add Noodles: Add broken lasagna noodles and cook until tender.
- Season and Serve: Season with salt and pepper. In a bowl, mix ricotta, mozzarella, and Parmesan. Serve soup topped with cheese mixture and herbs.
Notes
- You can substitute meat with plant-based crumbles for a vegetarian version.
- For a creamier soup, add a splash of heavy cream.
- Leftovers can be stored for up to 4 days.
