Description

This hearty Lasagna Soup combines all the flavors of traditional lasagna in a comforting, easy-to-make soup. Perfect for a cozy family dinner or to warm up on a chilly day.


Ingredients

Meat Sauce:

  • 1 pound ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon tomato paste
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef or chicken broth
  • 1 cup tomato sauce

Additional Ingredients:

  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare Meat Sauce: In a large pot, brown ground beef or sausage in olive oil. Add onion, garlic, oregano, basil, red pepper flakes, and tomato paste. Cook until fragrant.
  2. Simmer: Stir in crushed tomatoes, tomato sauce, and broth. Simmer for 15 minutes.
  3. Add Noodles: Add broken lasagna noodles and cook until tender.
  4. Season and Serve: Season with salt and pepper. In a bowl, mix ricotta, mozzarella, and Parmesan. Serve soup topped with cheese mixture and herbs.

Notes

  • You can substitute meat with plant-based crumbles for a vegetarian version.
  • For a creamier soup, add a splash of heavy cream.
  • Leftovers can be stored for up to 4 days.
