Description

This easy-to-make baked dish offers a flavorful twist on classic lasagna, perfect for a comforting family meal served in just 45 minutes.


Ingredients

Cheese Mixture

  • 1 cup Ricotta Cheese
  • 4 oz Light Cottage Cheese
  • 1 tsp Italian Seasoning
  • 2 tsp Garlic (minced)
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 3 tbsp Shredded Parmesan
  • 1/4 cup Shredded Mozzarella (for mixing)

  • 9 Lasagna Noodles
  • 3/4 cup Shredded Mozzarella (divided: 1/4 cup in cheese mixture, 1/2 cup for topping)
  • 2 cups Bolognese Sauce
  • Cooking Spray (for baking dish)


Instructions

  1. Preheat Oven: Set your oven to 400 degrees Fahrenheit to get it ready for baking the roll-ups later.
  2. Cook Noodles: Boil lasagna noodles according to the package instructions, about 10-12 minutes, until al dente. Drain and rinse with cold water, adding ice cubes to the colander to cool noodles quickly. Once cooled, pat noodles dry to remove excess moisture.
  3. Prepare Baking Dish: Spray a square baking dish with cooking spray, then spread 1 cup of bolognese sauce evenly on the bottom to prevent sticking and add flavor.
  4. Mix Cheese Filling: In a medium bowl, combine ricotta cheese, light cottage cheese, Italian seasoning, minced garlic, salt, black pepper, shredded parmesan, and 1/4 cup shredded mozzarella. Mix thoroughly until all ingredients are well incorporated.
  5. Assemble Roll-Ups: Lay one lasagna noodle flat and spread 3 tablespoons to 1/4 cup of the cheese mixture on one end. Carefully roll the noodle up tightly. Place each roll seam-side down in the prepared baking dish, lined up next to each other. Repeat until all noodles and cheese mixture are used.
  6. Add Sauce and Bake: Cover the roll-ups with the remaining 1 cup of bolognese sauce. Place foil over the dish and bake in the preheated oven for 20 minutes.
  7. Add Cheese Topping and Finish Baking: Remove the foil, sprinkle the remaining 1/2 cup shredded mozzarella over the top of the roll-ups. Bake uncovered for an additional 5 minutes or until the cheese is melted, bubbly, and slightly golden.
