Instructions
- Preheat Oven: Set your oven to 400 degrees Fahrenheit to get it ready for baking the roll-ups later.
- Cook Noodles: Boil lasagna noodles according to the package instructions, about 10-12 minutes, until al dente. Drain and rinse with cold water, adding ice cubes to the colander to cool noodles quickly. Once cooled, pat noodles dry to remove excess moisture.
- Prepare Baking Dish: Spray a square baking dish with cooking spray, then spread 1 cup of bolognese sauce evenly on the bottom to prevent sticking and add flavor.
- Mix Cheese Filling: In a medium bowl, combine ricotta cheese, light cottage cheese, Italian seasoning, minced garlic, salt, black pepper, shredded parmesan, and 1/4 cup shredded mozzarella. Mix thoroughly until all ingredients are well incorporated.
