Ingredients
For the Lamb Gyros:
- 1 pound ground lamb
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried oregano
- ½ teaspoon ground cumin
- ½ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 tablespoon olive oil
- 4 pita breads (warmed)
- 1 cup chopped romaine lettuce
- 1 cup diced tomatoes
- ½ small red onion (thinly sliced)
- ½ cup crumbled feta cheese
- ½ cup sliced cucumber
For the Tzatziki Sauce:
- 1 cup plain Greek yogurt
- ½ cup grated cucumber (squeezed dry)
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 garlic clove (minced)
- 1 tablespoon chopped fresh dill
- ¼ teaspoon salt
- ⅛ teaspoon black pepper
Instructions
- Season the Lamb: In a medium bowl, combine the ground lamb with salt, black pepper, dried oregano, ground cumin, garlic powder, and onion powder. Mix well to evenly distribute the spices throughout the meat.
- Cook the Lamb: Heat olive oil in a skillet over medium heat. Add the seasoned lamb, breaking it apart with a spoon. Cook until browned and fully cooked through, about 8 to 10 minutes. Remove from the heat and keep warm.
- Prepare the Tzatziki Sauce: In a small bowl, mix the plain Greek yogurt with grated cucumber (squeezed dry), olive oil, lemon juice, minced garlic, chopped fresh dill, salt, and black pepper. Stir until smooth, then chill until ready to serve.
- Warm the Pita Breads: Heat the pita breads until soft and pliable using a dry skillet, microwave, or oven.
- Assemble the Gyros: Spoon the cooked lamb into the center of each warmed pita bread. Top with chopped romaine lettuce, diced tomatoes, thinly sliced red onion, sliced cucumber, and crumbled feta cheese.
- Add Tzatziki and Serve: Drizzle each gyro with the prepared tzatziki sauce. Serve immediately for the best flavor and texture.
Notes
- You can substitute ground beef or a lamb-beef mix if desired.
- For a crispier texture, toast the pita bread before filling.
- Tzatziki sauce can be made up to 2 days ahead and stored in the refrigerator.
