Description

These King Crab Quesadillas are a delicious fusion of flavors, combining succulent king crab meat with gooey cheeses, fresh herbs, and a hint of spice, all wrapped in a crispy tortilla. Perfect for a quick appetizer or a tasty snack!

  • 8 oz cooked king crab meat, chopped
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped green onions
  • 1 tablespoon chopped fresh cilantro
  • 1 small jalapeño, finely diced (optional)
  • ¼ teaspoon smoked paprika
  • 4 large flour tortillas
  • 2 tablespoons butter or olive oil for cooking
  • sour cream, guacamole, and salsa for serving

Instructions:

  1. Mix Ingredients: In a mixing bowl, combine the king crab meat, cheeses, green onions, cilantro, jalapeño, and smoked paprika. Gently mix to combine.
  2. Fill Tortillas: Lay two tortillas flat and divide the filling between them, spreading over one half of each tortilla. Fold in half to enclose the filling.
  3. Cook Quesadillas: Heat butter or oil in a skillet. Cook each quesadilla for 2-3 minutes per side until golden and cheese is melted.
  4. Serve: Let rest for 1-2 minutes, then slice into wedges. Serve warm with sour cream, guacamole, and salsa.

Notes:

  • You can substitute imitation crab or shrimp if king crab isn’t available.
  • For extra richness, spread a thin layer of cream cheese on the inside of the tortillas before adding the filling.
