Ingredients
Main Ingredients
- 200 grams udon noodles
- 1 cup kimchi, chopped
- 1 cup scallions, chopped (green parts only)
- 2 cloves garlic, minced
- 1 tablespoon ginger, minced
- 1 cup vegetable broth
Seasonings and Sauces
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon gochujang (Korean red chili paste)
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
Instructions
- Cook Udon Noodles: Prepare the udon noodles by cooking them according to the package instructions, usually about 6-8 minutes. Once cooked, drain the noodles and set them aside.
- Heat Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium heat to prepare for sautéing the aromatics.
- Sauté Aromatics: Add minced garlic and ginger to the heated oil. Sauté for 1-2 minutes until fragrant, being careful not to burn them.
- Add Kimchi: Stir in the chopped kimchi and cook for 2-3 minutes until the kimchi is heated through and slightly softened, releasing its flavors.
- Add Broth and Simmer: Pour in 1 cup of vegetable broth and bring the mixture to a gentle simmer to meld the flavors.
- Add Udon Noodles: Add the cooked udon noodles to the skillet and stir gently to combine with the kimchi and broth.
- Season: Stir in 2 tablespoons of soy sauce and 1 tablespoon of gochujang, mixing thoroughly to evenly coat the noodles. Adjust the seasoning with salt and pepper to taste.
- Add Scallions: Toss in the chopped green parts of the scallions, stirring them into the noodles. Cook for an additional 2-3 minutes until everything is heated through.
- Serve: Spoon the Kimchi Udon into bowls and sprinkle with sesame seeds if desired. Serve hot and enjoy the vibrant, spicy flavors.
Notes
- For a spicier kick, increase the amount of gochujang or add chili flakes.
- You can add protein such as tofu, chicken, or beef for a heartier meal.
- Use fresh kimchi for the best flavor and texture.
- Leftovers store well in the refrigerator for up to 2 days but are best enjoyed fresh.
- Adjust the broth quantity if you prefer a soupier or drier noodle dish.
