A hearty and comforting soup made with smoked kielbasa, tender potatoes, and flavorful vegetables, perfect for a cozy meal.

- 1 lb smoked kielbasa, sliced
- 4 cups diced potatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 tsp dried thyme
- 1 bay leaf
- Chopped fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil and butter over medium heat. Add sliced kielbasa and cook until browned. Remove and set aside.
- In the same pot, add onion, carrots, and celery. Cook until vegetables are softened, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in diced potatoes, chicken broth, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Return kielbasa to the pot. Stir in the heavy cream and simmer for another 5 minutes.
- Remove bay leaf. Adjust seasoning as needed.
- Serve hot, garnished with chopped parsley if desired.
Notes
- For a thicker soup, mash some of the potatoes before adding the cream.
- Use turkey kielbasa for a lighter version.
- Can be made ahead and stored in the refrigerator for up to 3 days.
