Description

This KFC Bowl Casserole Recipe is a comforting, layered dish inspired by the popular KFC Chicken Bowl. It features crispy popcorn chicken, creamy mashed potatoes, sweet corn, melted cheddar cheese, and savory chicken gravy baked together to create a hearty and delicious casserole perfect for family dinners or casual gatherings.

Ingredients

Chicken and Main Ingredients

  • 1 ½ lb popcorn chicken (frozen or freshly made)
  • 2 envelopes instant mashed potatoes (prepared according to package instructions)
  • 31 oz can whole kernel corn, drained
  • 2 cups shredded cheddar cheese
  • 12 oz chicken gravy

Instructions

  1. Cook Chicken and Potatoes: Cook the popcorn chicken according to the package directions until crispy and fully cooked. Prepare the instant mashed potatoes by following the instructions on the packet to get creamy mashed potatoes.
  2. Layer Ingredients: Preheat your oven to 400°F (200°C). Grease a 9×13 inch baking dish. Spread the prepared mashed potatoes evenly over the bottom of the baking dish. Next, layer the drained whole kernel corn over the potatoes evenly, followed by spreading the cooked popcorn chicken on top.
  3. Bake the Casserole: Place the baking dish in the preheated oven and bake for 15 minutes to allow the layers to meld and warm through.
  4. Add Cheese and Continue Baking: Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the top of the popcorn chicken layer. Return it to the oven and bake for an additional 5 minutes, or until the cheese is fully melted and bubbly.
  5. Heat the Gravy and Serve: While the casserole finishes baking, heat the chicken gravy either on the stovetop or in the microwave until hot. Once the cheese is melted, remove the casserole from the oven and pour the heated chicken gravy evenly over the entire dish. Serve hot for a comforting meal.

Notes

  • You can substitute fresh mashed potatoes for instant if preferred, but cooking time might increase slightly.
  • For a spicier twist, add some diced jalapeños between the layers or mix hot sauce with the gravy.
  • If you want extra crunch, sprinkle some crispy fried onions on top along with the cheese before the last bake.
  • This casserole can be prepared ahead of time, assembled, refrigerated, and baked when ready to serve; just adjust baking time slightly if baking cold.
  • Use low-sodium gravy or reduced-fat cheese options to make this dish a bit healthier.
