Ingredients
Dry Ingredients:
- 1 cup natural peanut butter (unsweetened and unsalted)
- 1/2 cup granulated erythritol or monk fruit sweetener
- 1/2 teaspoon baking soda
- pinch of salt
Wet Ingredients:
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat the Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Ingredients: In a medium mixing bowl, combine the peanut butter, sweetener, egg, vanilla extract, baking soda, and salt. Stir until the mixture forms a smooth dough.
- Shape Cookies: Scoop out tablespoon-sized portions and roll into balls, then place them on the prepared baking sheet about 2 inches apart. Flatten each cookie slightly with a fork in a crisscross pattern.
- Bake: Bake for 10–12 minutes or until the edges are set and the tops begin to crack.
- Cool and Enjoy: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
